Sticky pecan bread

1 cup white sugar

1 cup dark brown sugar

4 eggs

1/2 cup olive oil

1/2 cup melted butter

2 cups flour

2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon vanilla extract

2 cups chopped pecans

Preheat the oven to 350 degrees Fahrenheit. Prepare a 9×13 inch pan using butter or Crisco and flour. Stir together the eggs, butter, oil, and both sugars. Add Vanilla. In a separate bowl, combine the flour, baking powder, salt, and baking soda. Pour the dry ingredients into the wet and stir fully. Add the pecans. Bake in the preheated oven for 30-35 minutes or until the center is set. Let cool before slicing.

Peanut butter blondies with chocolate chips

These are ridiculously good. I could even see chocolate icing on top. They remind me slightly of Reeses peanut butter cups.

If the butter is really room temperature these can be mixed by hand without a mixer.

 

1 stick of butter at room temperature

1/2 cup creamy peanut butter

1 cup light brown sugar

1/2 teaspoon vanilla

2 eggs

1 1/4 cup flour

2/3-3/4 cup semi sweet chocolate chips

 

Preheat the oven to 350 degrees. Cream the butter and peanut butter together. Add the sugar. Add the eggs and vanilla. Gradually add the flour and the  finally the chocolate chips. Pour this into a prepared 8×8 pan and bake for 20-25 minutes or until a tooth pick inserted is removed clean.
