2 pounds ground beef

2 cups onion, chopped

1 cup green bell pepper, chopped

1 cup celery, chopped

3 cloves garlic, minced

1/2 cup dark roux – bacon grease/flour

1 tablespoon cajun seasoning

1 teaspoon salt

1 teaspoon hot sauce

1 teaspoon black pepper

15 cups cooked white rice
